One of my favorite go-to side dishes is grilled potatoes. It really doesn’t get much easier. This recipe is packed with flavor, is inexpensive and simple to prepare.
All you need is aluminum foil, potatoes, a sweet onion, butter, olive oil, salt and pepper.
Grilled potatoes
Ingredients:
6 red potatoes
1 small or medium sweet onion*
3-4 Tablespoons butter*
Drizzle of olive oil*
Salt and pepper to taste (or season salt and Old Bay Seasoning)
* You can substitute the butter and olive oil for your preferred cooking oil.
Step 1:
Preheat the grill to medium to medium-high heat.
Step 2:
I use red potatoes. Give them a good wash and rinse. Slice them up. I then peel and chop a sweet onion while I’ve got the cutting board out.
Step 3:
You can buy grill/oven bags, or you can make them like I do out of aluminum foil. Gauge the amount of potatoes you’re preparing, and cut the aluminum foil accordingly.
Step 4:
Mix the potatoes and onions and place them in the foil pouch. Add butter, a drizzle of olive oil and season with salt and pepper. You can also add additional seasoning if you prefer.
Step 5:
Seal the pouch. If you are making your own pouch, be sure your seal is on the top to prevent the oil and butter from leaking and causing a flare-up. Remember you will not flip the pouch. Just give it a good shake using your grill tongs every so often.
Step 6:
Place the pouch on the grill for about 30 minutes, or until the potatoes are tender.
Step 7:
Serve and enjoy. Be careful when you open the pouch to avoid hot steam that could cause burns.
